Let me back up a bit...because I have Celiac Disease I cannot eat anything with gluten...which is pretty much in everything. So, not wanting to be a professional Celiac who is always looking for the next gluten-free muffin, I have opted for another route. The "Why" not the "What" path of gluten-free discovery. Fortunately, many have gone before me and now share their hard work online. So, the more I study and read about autoimmune disorders, the more I discover that a lot of the problems begin with how our food is produced. Hence, the vat of sorghum flour and red cabbage leaves which will one day become a gluten-free sourdough starter. But, here it is sitting on my kitchen counter looming large and looking weird.
But wait, there's more...
On the opposite side of my sink sits this. More weirdness...no cabbage leaves....
Instead,I have made yogurt in my crockpot...can you believe it. Here's the recipe in case you are interested...it is so easy...you just thought crockpots were for cooking pot roast and beans....
On the island...weellll, what can I say...there is no real explanation for this one...
I am making kombucha and that nasty-looking thing is my SCOBY which is some sort of bacterial fungi that makes tea fizzy and delicious AND also really good for you. I will actually separate those two slimy bacterial pancakes and reuse them. FMI - check out Cultures for Health which has videos.
So, stay with me, right now in my kitchen I am brewing sourdough that really looks like it could be a mash for mixing up a batch of moonshine, a crockpot full of yogurt, and a fermented tea (isn't that wine??).
Wait, there's still one more thing "cooking" in my kitchen...
The food dehydrator is whirring away. I will admit that this usually has normal things in it like tomatoes from my garden. But, if you had been in my kitchen yesterday you would've seen a huge bowl of soaked almonds. Well, who wants to eat wet almonds...raise your hand...I thought so. They have to be dried out....
...which gives them the most delicous flavor once they are roasted. Way better than chips or crackers when you need a snack. I keep a jar on the counter (more stuff...).
Now to recap...when I walked into my kitchen this morning, I was saw this...

I think some of the Keep Austin Weird is starting to rub off on me...
